I’m a creature of habit meaning when I visit Wagamana I opt for the same dish every time. That dish is their classic and most popular recipe – Wagamama Yaki Udon. I love this recipe so much that I figured out how to make it for myself, since it was impossible to find anything remotely like the original. In less than 20 minutes, you too can be enjoying a copycat version of this recipe on your dinner table. Packed full of fresh goodness and served with toasted sesame seeds and pickled ginger.

This classic Wagamama yaki udon noodle recipe is a combination of udon noodles, stir fry vegetables and mixture of delightful sauces. This isn’t just any ordinary copycat recipe, this is the exact ingredients that are used in the restaurant, as well as the method that is used.

Wagamama Yaki Udon Recipe

Get your chopsticks ready as this Wagamama Yaki udon recipe can’t be eaten any other way. Tasty, addictive and of course filled to the brim with flavor. There will be nothing left at the end of this dish.

Ingredients

  • 2 boneless + skinless chicken thighs

  • 2 tbsp vegetable oil

  • 450g udon noodles

  • 2 eggs, lightly beaten

  • 20 g 20 noyaki chikuwa* (or extra prawns)

  • 8 cooked peeled prawns

  • 1 leek, finely sliced

  • 1 red pepper, finely sliced

  • 1 large 1 green pepper, finely sliced

  • 40 g 40 shiitake mushrooms, sliced

  • 80 g 80 beansprouts

  • 1 tbsp 1 chilli oil, to taste

  • 1 tbsp 1 light soy sauce

  • sea salt + white pepper, to taste

  • 1 tbsp 1 toasted mixed sesame seeds

  • 1 tbsp 1 crispy fried onions

  • 1 tbsp 1 pickled ginger

Directions

  • Initial step is to season the chicken and heat 1 tbsp of the oil in a wok over a medium-high heat. You then need to add the chicken and fry it until it becomes brown in color.
  • Cook the noodles on the wok as per their instructions and then place them in a large mixing bowl
  • Add the eggs, noyaki chikuwa*, cooked prawns and chicken to the noodles and stir through so the noodles are thoroughly coated with the egg.
  • Heat oil in a wok over a medium-high heat, add all the vegetables and stir-fry for 2 – 3 minutes
  • Add the noodle mixture to the pan with chilli oil and soy sauce, and mix the ingredients for 2 minutes
  • Divide the noodles between 2 serving plates and garnish with the sesame seeds, crispy onions and pickled ginger.
  • Serve and enjoy hot.
