Cream cheese - Helps to add creaminess to the creamy cheese sauce.

Sour cream - Adds flavor and taste. You could also use unflavored Greek yogurt for an extra protein kick.

Mayonnaise - Pairs well with the other flavors.

Half and half - Adds a nice richness. You can use heavy cream if you prefer.

Shredded cheddar - You can change the type of cheese used each time you make this.

Dried minced onion - For flavor.

Garlic powder- For flavor.

Salt - You may add salt to your preference. Feel free to taste the sauce when you make it.

How to make Keto Broccoli Cauliflower Casserole

Step One: Preheat the oven to 350 degrees. Spray non-stick cooking spray on a 9X13 baking dish.

Step Two: Add the cauliflower and broccoli and then cover with foil. Put the pan in the oven and bake for 20 minutes.

Step Three: Add the seasonings with the cream cheese, mayo, sour cream, half and half, and also half of the cheese in a large mixing bowl. Mix well.

Variations

Change the type of cheese - While I use sharp cheddar cheese for this recipe, you can easily change the type of cheese for the best results. Mozzarella cheese is a great choice. As is parmesan cheese. This keto cauliflower casserole is a very versatile low carb side dish.

Add meat - If you want to add some protein to this cauliflower casserole recipe, adding chicken breast or bacon is never a bad idea. Just make sure that the meat is fully cooked before adding to this easy side dish.

Add other roasted veggies - There is always room for more veggies in a loaded casserole. Slice up some Brussels sprouts and add them. You can also add more cauliflower in the place broccoli should be, or vice versa.

Can I use frozen broccoli for this low-carb dinner?

It's best to use fresh vegetables if possible but frozen can be subbed in a pinch. Just be sure that you thaw and drain the broccoli before adding it to this dish.

Frozen broccoli will have a different texture and won't be the same as using fresh. You will want to make sure that it's drained really well while also having the understanding that frozen broccoli will be broken into smaller pieces.

This will make the cauliflower have a stronger taste and texture, which is fine, but just something to be aware of should you decide to use frozen.

Can I freeze the leftovers of this keto cauliflower recipe?

You can! Making and freezing leftover keto recipes means that you'll get to enjoy them again. Just let the dish cool down all the way after baking it, and then add the cheesy casserole to the freezer in a freezer-safe container.

When it's time to eat it again, thaw it in the fridge and then reheat it thoroughly once thawed.

Can I add toppings to the top of the casserole?

Just remember that anything extra added could add to the overall net carbs. Adding some bacon pieces on top, or even some more shredded cheese, would be a great idea!

Ingredients

  • 1 lb fresh broccoli
  • 1 lb fresh cauliflower
  • 4 oz cream cheese softened
  • 4 oz sour cream
  • 4 oz mayo
  • 2 oz half and half or heavy cream
  • 6 oz shredded cheddar divided
  • 1 tablespoon dried minced onion
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Preheat the oven to 350. Spray a 9 x 13 baking dish with cooking spray.

  • Add broccoli and cauliflower to the baking dish with ½ cup of water. Cover with foil. Bake for 20 minutes or until softened. Drain the water.

  • Mix seasonings with cream cheese, sour cream, mayo, half and half, and half the cheese in a large bowl.

  • Fold in the broccoli and cauliflower. Spread in the prepared casserole dish. To with the remaining cheese.

  • Bake until hot, about 15 min.

Notes

Substitutions: You can swap the cheddar cheese for Monterey jack, mozzarella or any other cheese that melts well.

Additions:Feel free to add in some crumbled bacon, cooked chicken, cooked turkey, other steamed veggies, etc. This base creamy sauce is also great in other casseroles.

Frozen Vegetables: In a pinch, you can sub in frozen broccoli and frozen cauliflower. Cook according to the package and drain it well before adding it.

To Reheat: You quickly can reheat the leftovers in the microwave for 1 - 2 minutes or until hot. Another option is to warm it in the oven at 350 degrees for 10-15 minutes. Once heated through and the cheese has melted, you can serve.

To Freeze: Either freeze the entire batch of in a large freezer-safe container or in individual servings. It’s best to thaw in the fridge before warming up.
