A delicious and easy Guava Fridge Tart Recipe

I know Summer is over, I know everybody´s probably posting pumpkin and apple recipes, but since South Afica is in the Southern Hemisphere, and I´m visiting here at the moment, I´m posting this Guava Fridge Tart Recipe because everyone here has been celebrating the start of Spring and they´re getting even more excited about the promise ofSummer!

Thiseasy fridge tart recipe is made with evaporated milk, red jelly (jello), tinned guavas and coconut biscuits. That´s it! You can also make this fridge tart into a healthy/skinny versionby replacing the full cream evaporated milk with a lighter versionand the red jelly with a sugar free version. Then you could replace the biscuits with a diet version or leave it out completely..

So those of you who follow me will know I´m in South Africa currently visiting friends & family. It wasn´t a planned trip. A few weeks ago I got a phone call from my sister saying that my Mother was taken up in hospital with a very bad lung infection and was really ill.

A couple days later she seemed to improve but shortly thereafter she went into a natural coma because her body wasn´t getting rid of the carbon dioxide in her lungs and that was poisoning her blood stream. It became a whirlwind of organizing, paperwork, my daughter´s passport was in process in South Africa and we needed to fly to Madrid to organize her an emergency travel certificate, packing, etc..

My mother has since then improved drastically and was sent home from hospital, after nearly 3 weeks in ICU, 1 week in a normal ward to recuperate thereafter and as transition period before going home. During her time in ICU she was declared critical 3 times, one time we were phoned at 7am in the morning and told we all needed to come to the hospital urgently because she had suffered a very bad night and they feared the worst.

During all this time I had many friends and family who prayed for her, here in South Africa, as well as my friends and pastors in our church in Spain. The way she recovered could only be described as a miracle and I´m so thankful to God to giveher to us for a “little” while longer. I´m not sure when it will really be her time to go but we get to celebrate some more special moments with her and we are so thankful!

Now for the actual reason why I´m posting today.. this super easy guava fridge tart that my sister´s boyfriend made for us. I was going to help him (really I was) but in the end I was on the recliner seat while he was slaving off in the open plan kitchen..lol.. But.. I did take notes to see how he made it!

His mother passed on the recipe to him so it´s a family recipe.

Ingredients

  • 1 packet red jelly/jello (this could be strawberry, raspberry or cherry jelly)
  • 1 cup hot water
  • 1 tin evaporated milk (you could use the light version too to make this a skinny dessert)
  • 2 packets Tennis biscuits (these are very famous here in South ASfrica and have a coconut flavour. You could use a coconut type biscuit where you live or alternatively
  • you could use Graham Crackers in the US or digesitve biscuits in the UK).
  • 1 large tin of guavas (or fresh, ripe guavas) cut in small pieces or alternatively liquidised if you don´t like the pieces and prefer your tart to be smoother.

Instructions

  1. Add 1 cup of hot water to the 1 packet of jelly and allow to cool to room temperature.
  2. Beat the evaporated milk until it has thickened but still runny.
  3. Add the cooled jelly and guava to the beated evaporated milk and fold in slowly.
  4. Line a dish with your biscuits, making sure it covers all of the bottom of the dish and the sides.
  5. Pour the liquid mixture over the biscuits and set in the fridge for a couple of hours.
  6. ENJOY!
