Peanut Butter Pinwheels are a very simple homemade candy treat. Sometimes called Potato Candy, the name comes from substituting mashed potatoes instead of milk in the recipe.

Growing up in Corbin, KY, this is a special candy treat that mom rarely prepared. When it was made, it was devoured in minutes! Today, our kids rank this as their absolute favorite homemade candy. We have used this as a peace offering to, family members, friends, bosses, and even our kid’s teachers! Our kids feel that we must be “cookin” (Breaking Bad pun) something in these to make them addictive… because you can’t stop eating until they are all gone. If there is a food category defined as “Comfort Candy”, this is clearly Numero Uno!

INGREDIENTS FOR HOMEMADE PEANUT BUTTER CANDY

  • Confectioners Sugar
  • Milk
  • Vanilla Extract
  • Butter softened
  • Creamy Peanut Butter

INSTRUCTIONS FOR PINWHEEL CANDY

In a large mixing bowl, add 1 pound of confectioners sugar, 1 stick of softened butter, and 1 teaspoon of vanilla extract and mix using a power mixer.

While mixing add 2 tablespoons of milk.

Mix until you reach the consistency of dough.

Remove dough from bowl and place on parchment paper dusted with confectioners sugar.

Shape into a rectangle, dust the top with additional sugar to prevent sticking.

Place another sheet of parchment paper over the dough prior to roiling with a rolling pen.

Cover the top of the dough with an even layer of peanut butter.

Take the long length section and roll, making a long candy roll.

Place rolled candy into the refrigerator for at least one hour.

Take out of the refrigerator and cut to size.

Ingredients

  • 1 lb Powdered Sugar
  • 1 stick Butter softened
  • 2 tbsp Milk
  • 1 tsp Vanilla
  • 8 oz Peanut Butter

Instructions

  • Beat powdered sugar, butter and vanilla until combined.

  • Slowly add milk until mixture somes together, stiff and dough-like.

  • Roll out out mixture between 2 sheets wax paper to ¼" thick rectangle.

  • Remove top piece of waxed paper.

  • Spread evenly with peanut butter and roll into a log, peeling back wax paper as you go.

  • Wrap in wax paper and refrigerate for one hour.

  • Slice and serve.
