What Is

Speck is a cold-cured, lightly smoked ham or bacon typical of the northeastern regions of Italy. In Alto Adige, speck gained IGP recognition in 1996 and is produced in Bolzano province from boned pork haunches flavored with juniper. It is cold smoked and aged from 20 to 32 weeks.

How To

Speck can be eaten either sliced or cut into small cubes as an ingredient in certain recipes. It can be sliced with a mechanical slicer, which results in thin slices that are perfect on buttered black bread. Cut into small cubes or strips, speck is excellent served with bread sticks or taralli. This requires a very sharp knife to cut inch-thick slices that should then have the rind removed. For a more delicate flavor, the spiced crust can be removed. If it is not removed, the speck with have a robust, spicy taste.

Italian Tradition

Speck is quite a versatile cold meat, perfect sampled with slices of black bread or as an ingredient in many recipes. The most famous of these is inarguably spazle panna e speck, tiny dumplings made with soft wheat flour and egg, served with thin slices of this delicious meat and fresh cream, a typical first course in the valleys of South Tyrol. Canederli also use speck: these are large balls of bread dough stuffed with speck or cheese and cooked in meat broth, often compared to gnocchi. Canederli is an ancient recipe: the farmers of Alto Adige prepared this dish using their leftover bread when it hardened, along with what their land produced: speck and cheese, still the cornerstones of Trento cuisine today.

How To Keep It Fresh

Vacuum packed speck will last for months. Once it is opened, it lasts for one day wrapped in food-grade paper and kept refrigerated.
