Itis made by a process of washing the curd.Some of the whey is drained, it is replaced by warm water and drained again and more water is added. That water is then heated, which helps expel moisture from inside the curd. The purpose of washing the curd is to reduce the amount of lactose in the cheese. Lactose is the naturally occurring milk sugars.The cheese is then pressed for days which is how the cheese gets it’s flat, round shape. After that, the gouda is stored and aged for months to even years depending on desired results and flavors.
