Nutella Granola Recipe (1)

One of my New Years resolutions was to not spend so much money on packaged food that I know I can make at home for cheaper. Things like cookies, cereal bars, and granola. I have 3 boys – do you know how long a box of granolalasts in my house? A day.

I know it’s going to require some extra effort on my part but I’m all in.

And it seems to be working well for me so far. My grocery bill this week and last was significant lower than they had been previously. And there hasn’t even been a whole lot of complaining about the lack of Oreos and Nutrigrain bars. Yet.

Here’s the thing though, as much as I don’t want to buy boxes of cereal and granola, it is definitely the go to breakfast food around here. You won’t find me making waffles at 5:30 in the morning. No ma’am.

So I am taking time each Sunday to make a big batch of homemade granola for the kids to eat before school all week long.

Granola is so much easier than you would expect it to be. For this Nutella Granola, you just coat regular oats and chopped hazelnuts in a nutella and coconut oil mixture and bake it for 30 minutes. You let that cool completely and then stir in some chocolate chips.

It is so delicious! It tastes like those yummy chocolate truffles with the hazelnut in the middle – and those are my favorite! I like pairing homemade granola with Greek yogurt so you also get a good bit of protein to start your day but it’s also delicious by itself or with milk!

Hey there. My mother in law in I have both been wanting to try a Nutella recipe and this might be our first since it looks easy. However I don’t have hazelnuts, is it a big whoop if I sub with pecans or walnuts?

FAQs

Why is my homemade granola not crunchy? ›

I aim to let it hit room temperature, whatever that may be; the real point is to give it ample time to shed excess heat and steam. This should take about 45 minutes; if left out indefinitely, the granola can turn sticky or soft, so do try to put it away as soon after cooling as you can.

What ingredient makes granola clump together? ›

Clumpy Granola Method: Add Egg White

About this method: According to Deb Perelman of Smitten Kitchen, “Nothing glues like protein.” While there are many granola recipes that include an egg white, I got this tip from the Big Cluster Maple Granola recipe in The Smitten Kitchen Cookbook.

How to make soft granola crunchy? ›

Not only can you transform that soggy, chewy granola back to being blissfully crunchy, but it's easier than you might think. All it takes is spreading the granola in a single layer on a rimmed baking sheet and heating it in a 400 degree oven for five minutes — essentially re-baking it.

Is granola worth it? ›

The Bottom Line

Granola is healthy in small amounts, especially because oats, nuts, seeds and dried fruit in granola provide some fiber that's good for heart and gut health. However, granola can also be a rich source of calories, saturated fat and sugar, depending on the brand you buy.

Does homemade granola get crunchy as it cools? ›

Your homemade granola will continue to crisp up as it cools. It's tempting to start eating it as soon as it comes out of the oven, but if you let it rest for 15 minutes on the sheet pan, it'll be extra crisp and toasty – totally worth the wait!

Why is my granola still soft? ›

If they are soggy after storage, they may have been stored while still warm. To fix this, spread the granola on a baking sheet and heat it in a 400-degree oven for about 5 minutes. This quick high temp bake is only for reheating and should only be done for a few minutes to prevent burning.

What is the best binder for granola? ›

Nut butter is a super flavorful fat that serves multiple purposes in granola. It acts as a binding agent—along with additional coconut oil and whatever natural sweetener I've chosen—helping to pull the dry ingredients together into a wet, sticky mass for baking.

What is a good binder for granola? ›

While there are several different sticky ingredients that you can use, we've found that the binding agent that works the best is honey! When added to your homemade granola bars, honey acts as glue that sticks all the pieces together.

How do you get homemade granola to stick together? ›

Add an egg white.

The whites act as a kind of glue that binds the ingredients together. To ensure that the egg whites coat all the ingredients, I beat them with a whisk until foamy and increased in volume, which makes it much easier to fold into the granola.

Why is my homemade granola dry? ›

Keep in mind that the granola won't be dry right out of the oven — it will dry as it cools. So take it out of the oven when it looks lightly toasted and smells like cooked honey. We're going for a toasty smell here. Add dried fruit after baking.

Why does my homemade granola taste bitter? ›

Most granola recipes add the nuts in the beginning and the nuts just cook too long and become bitter. Also cooking at a low temperature means there is no constant stirring like most recipes. You only stir when you add the nuts and coconut.

What was the downside to granola as a food? ›

Downsides of granola

Although granola contains several healthy ingredients, it can be high in calories and packed with added fats and sugars.

Why is granola so expensive? ›

“These certifications can be costly to obtain and maintain. Plus, you may also see the pricier granola have a higher concentration of nuts, seeds, and dried fruits to provide more nutrients and flavor, which can be costly compared to grain-based ingredients.”

Should granola be soft when it comes out of the oven? ›

Bake the granola at 225F for 2 hours until it becomes a nice golden color. It will still be soft to the touch, but never fear, it will get crunchy after you remove it from the oven. Remove the granola from the oven after 2 hours and let it sit on the countertop to cool for at least 20 minutes.

How do you fix bland granola? ›

As a result, I tended to leave barely tapped bags sitting in my cupboard for months, until I discovered an easy way to alleviate the sadness of a flavorless, pasty granola: Simply pan-toast it in salted butter.

Is granola soft when it comes out of the oven? ›

Bake for 20 minutes, stirring occasionally. Remove from oven at this point, if you want a soft granola. Bake 15 minutes longer for a crunchy product.
